Welcome to This Fig Life! I’m so glad that you are here to join me on this adventure! For the past couple weeks, Brad and I have been enjoying figs with so many different meals. It has been fun seeing all the different ways that I could come up with to feature these figs and I will be sharing all of those with you! We’re starting this blog off with a absolutely delicious summer salad featuring fresh fruits of summer.
This blog began because our one fig tree in the front yard produces *a lot* of figs. In less than one week we had picked over 650 figs off the tree. I normally blog over at Simply {Darr}ling, and one of my friends told me that I should start a blog all about figs, so here we are! I hope you have fun joining me on this adventure and enjoy these delicious fig recipes.
- 2 cups Baby Greens & Spinach Mixture
- 1 Chicken Breast or Tender (I used a chicken tender because it is what I had in the house)
- ¼ cup blueberries
- 5-6 Strawberries, sliced
- Julienne carrots
- ¼ Avocado, chopped
- 2-3 Figs, sliced (into ⅙ish)
- Feta, to taste
- Poppyseed Dressing
- Grill the Chicken Breast or bake the Chicken Tenders, slice into 1" segments
- Place the baby greens & spinach mixture on a plate
- Top with other ingredients
- FInish with Poppyseed dressing
This salad is absolutely delicious! It is light yet filling and a perfect dish to eat as we approach the end of summer and all these fruits are in season.
